  1. Prepare the Filling: In a large skillet over medium heat, add 1 tablespoon of vegetable oil. Sauté the diced onions and bell peppers until they are soft, about 5-7 minutes. Add the shredded cooked chicken (or your chosen filling) and seasoning - chili powder, cumin, garlic powder, onion powder, smoked paprika, dried oregano, black pepper, and salt. Stir well to combine and cook for another 5 minutes to let the flavors meld. Remove from heat and set aside.
  2. Warm the Tortillas: To make the tortillas pliable, heat them on a skillet over medium heat for about 30 seconds on each side, or wrap them in a damp paper towel and microwave for 1 minute.
  3. Assemble the Enchiladas: Preheat your oven to 375°F (190°C). Spread a thin layer of enchilada sauce on the bottom of a baking dish.
